Trying to find a nice recipe for butter rum cupcakes… then I’m going to top them with an eggnog-dreamwhip-pudding frosting. Yum.
- 1 tbsp. butter, melted
- 1 tbsp. white sugar
- 1 tbsp. brown sugar
- 3 drops of vanilla
- pinch of salt
- 1 egg yolk
- 1/4 c. flour
- 2 tbsp. chocolate chips
In a bowl, mix together the butter, sugars, vanilla, and egg yolk. Add in the flour and salt. Mix until combined. Add in the chocolate chips. Put the dough into a small microwaveable bowl, ramekin, or coffee cup. Microwave for 40-60 seconds or until the cookie looks done. Best served warm… Enjoy!

I made biscuits again and this time they turned out delicious. I used a slightly different recipe and did them as drop biscuits instead of rolling/cutting them out. That way there was a lot less chance of me overworking the dough. :P
I made biscuits yesterday and they turned out funny. They weren’t bad, but they had an odd texture; similar to shortbread. I want flaky biscuits. I think maybe I overworked the dough, but I kind of want to try a different recipe too. The recipe I used was:
1/2 c butter
2/3 c milk
1 tbsp baking powder
1 tsp salt
2 c flour
Any suggestions?
